Cinnamon Spice Muffins

I will admit that the baking way of living is NOT new to our home in the COVID-19 shut-in. We have been baking muffins for breakfast for a long long time. I can’t remember the last time I bought a muffin or bread for that matter. We also make that. Now, most of you are thinking – where’s the bread at? No luck and need to bake! The great news is that this recipe DOES NOT require yeast (also shortage around here I am told).

These are healthy muffins that can be made from pantry items. If you can’t find these pantry items near you I am going to link you to some options in Thrive Market, or via Amazon.

You are going to mix the wet ingredients first and blend them with a handheld mixer or use a blender. Then you will stop the mixing and add in the dry ingredients and blend again until smooth.

I use coconut oil to oil my cooking muffin tin and do not use paper liners. If you use liners they may take longer or sag in the middle – just a warning. I find the best results without liners. You will need to wait until they are cool in the pan to remove them gently with a spoon. DO NOT TRY TO TAKE THEM OUT HOT.

Cinnamon Spice Muffins

• 2 large eggs
• 1 large egg white
• 2/3 cup water
• 1/4 cup ghee or coconut oil (Melted)
• 2 tbsp maple syrup
• 2 tsp vanilla
• 2 1/2 cups almond flour
• 1/2 cup arrowroot flour
• 1 tsp cream of tartar
• 1/2 tsp baking soda
• 1/2 tsp sea salt
• 1 tsp cinnamon
• 1/4 tsp nutmeg

• Preheat oven to 350
• Combine eggs, egg white, water, coconut oil, maple, vanilla in blender and blend until frothy (same for hand mixer)
• Add in almond flour, arrowroot, cream of tartar, baking soda, and sea salt, with cinnamon and nutmeg and blend again until smooth.
• Evenly distribute the mix into the muffin tin.
• Cook for 28-30 minutes.

Try one of these with breakfast in the morning! We have one with eggs, spinach, and a cup of fresh fruit! Delish! Oh and these are KID APPROVED!
