Eggs w Spinach
My go-to breakfast daily. Easy and delish.
- 1 c spinach
- 1 egg
- 1 egg white
- 1 tbsp butter grass fed
- 1 tbsp goat cheese of choice
- dash salt & pepper
- On medium heat melt butter.
- Pour eggs into a bowl, goat cheese, and a dash of salt and pepper.
- Pour eggs into pan, and sprinkle the baby spinach over the eggs. Cook through while scrambling. Serve hot.
I also serve fresh fruit mix (1 c) and a homemade grain free bread (Check out Grain Free Family Table by Carrie Vitt) with this breakfast.
