Scrambled Eggs with Spinach

Eggs w Spinach

My go-to breakfast daily. Easy and delish.

  • 1 c spinach
  • 1 egg
  • 1 egg white
  • 1 tbsp butter grass fed
  • 1 tbsp goat cheese of choice
  • dash salt & pepper


  • On medium heat melt butter.
  • Pour eggs into a bowl, goat cheese, and a dash of salt and pepper.
  • Pour eggs into pan, and sprinkle the baby spinach over the eggs. Cook through while scrambling. Serve hot.

I also serve fresh fruit mix (1 c) and a homemade grain free bread (Check out Grain Free Family Table by Carrie Vitt) with this breakfast.
